Quick and easy recipes using only one pan

Recipe#1
Layered Dip
Serves four or more
-Two medium ripe avocados- peeled, cored, mashed.
-One tablespoon lemon juice
-Pinch salt-and-pepper
-Layer of salsa or diced tomatoes
-Small can of black beans
-Small can of black olives
-Block of marble cheese grated
-Green onion chopped

Using a deep dish, clear pan, or clear deep bowl, layer as follows:
-Top – sour cream + green onions + sliced black olives
-Avocados mixed with lemon juice + salt-and-pepper
-Sour cream
-Black Beans
-Sour cream
-Salsa
-Sour cream
-Cheese
-Sour cream – bottom
Substitute – beans with grilled chicken seasoned with sweet thai chili sauce
Recipe #2
Cinnamon toast rollups
-One bag sliced whole wheat bread
-Two eggs
-1/2 cup milk
-1/3 cup sugar or less
-One teaspoon cinnamon
Filling of choice – cream cheese/jam, cream cheese/ Nutella, peanut butter/ honey, almond butter/agave nectar.
You could even try putting some cream cheese and sliced deli meat or bacon. Try tuna or other spreads that will be welcomed by your tastebuds. If you are trying a non-dessert roll, just remove the sugar from the dip.
Cut the crusts off the bread and roll flat with a rolling pin or round glass. Using a bowl, mix eggs, milk, cinnamon, and sugar. Feel free to skip the sugar in the recipe as you are adding sugar on the outside. You can skip the milk or use soy instead, if desired. Spread the filling on one side of bread and roll up. Lightly grease the pan with oil over a low-medium heat. Dip roll ups in the mix, and fry until golden brown all over. Once they are cooked sprinkle cinnamon and sugar as needed.
Recipe#3
Rainbow pasta
Serves five or more
-Medium-sized pot
-One bag of spinach
-1/2 large red onion
-Three medium jalapeños
-Pinch of pepper
-Four large white mushrooms from bulk
-Four cloves of garlic
-A bag of tri-colour vegetable pasta
-One can of pasta sauce
-A mixing bowl
In the pot, pour some vegetable oil and simmer on medium heat. Add washed spinach and cook until leaves shrink. Once cooked, place pale in bowl. Take half of a red onion, chopped, and cook until soft. Then, place onion in the bowl. Repeat for mushrooms, garlic, and chop jalapeños in rings. Add the pasta sauce to all cooked vegetables and stir. Mix seasoning of your choice.
Fill the pot 2/3 with water and bring to a boil. Once boiled, add pasta and cover lid. Let it boil for about 12 minutes or until the pasta is soft. Drain the pasta and put the pasta back in the pot. Mix the vegetable sauce mix together; add feta cheese on top if desired.
