Orange and Herb Roasted Turkey Cutlets
4 turkey breast cutlets
1 tbsp thyme, chopped
1 tbsp sage leaves, chopped
2 tbsp olive oil
1 orange
salt and pepper
Preheat oven to 350 degrees. Grease a glass baking dish with a small amount of olive oil, evenly coating the surface. Place the individual turkey breast cutlets in a single layer in the dish. Season with salt and pepper.
In a separate bowl, squeeze one half of an orange into 2 tbsp of olive oil. Chop herbs and stir in with the liquid mixture; pour evenly over the cutlets. Slice the other half of the orange and place on top of the turkey to add more flavour.
Once preheated, insert the dish into the oven and allow to cook for 20-25 minutes. To brown the surface of the turkey, turn on the oven’s broiler for an extra five minutes.
Remove from oven and allow dish to sit for a few minutes before serving or slicing.
