
Apple Cranberry Salad
4 cups mixed spring greens
1 apple, thinly sliced
1/2 cup walnuts, chopped
1/2 cup dried cranberries
1/3 cup goat cheese
1/2 cup poppy seed dressing
Core and thinly slice apples; roughly chop walnuts in quarters (or buy them pre-chopped). Don’t do this step too far in advance of serving—the apples may turn brown before you can enjoy them.
Toss mixed greens into a large serving bowl, crumble the goat cheese in small chunks, then add the apples, walnuts, and cranberries.
Just before serving, add the poppy seed dressing to your liking (or another dressing of your choice—a maple vinaigrette would also work well).
