On Recipes: Quick and easy summer bagel

For when you’re in need of a grab-and-go meal this summer

A simple summer bagel topped with fresh veggies makes for a tasty breakfast or a snack — easy to take with you on the go, or great to enjoy on the porch in the morning alongside a hot cup of coffee or tall glass of water.

Ingredients:

  • Bagel (blueberry with oats is a tasty variety)
  • Vegetables (cucumber, tomatoes, or whatever you have around)
  • Cream Cheese

Preparation:  

  1. Toast the bagel.
  2. Spread cream cheese thickly on one or both sides of the bagel.
  3. Arrange your favourite veggies on top in an eye-catching manner.

For something more savory, try a fried egg bagel with butter or margarine. Fry an egg; use a mason jar ring for a perfect circle and sprinkle some shredded cheddar or mozzarella cheese on it as the egg cooks in the pan so it gets perfectly melty (adventurous types can try blue cheese — the heat will cut the strong flavour), and add your favourite vegetables.

Or make a fruit-salad bagel using peanut butter or honey with strawberries or blueberries, and finally, sprinkle some flax or chia seeds on top for texture and nutrients!
